President Biden met virtually with the leaders of Japan, India, and Australia known as “the Quad”. The objective of the meeting is to set the stage to counter China. The key question many are asking is: Will the EU join the Quad?
Hard to tell at this time given the fact the Germany is at the heart of the EU. This comes on the heels of the US warning of possible sanctions against Germany over Nord Stream 2.

No, south Korea is not part of Quad.
South Korea carefully chose not to take part in Quad in part because their geopolitical position and economic relations is very important with China.

I don't think it would matter even if the EU joins the Quad. We have to look the game within the game. Every country is just trying to get the little extra edge it needs in every organization.
Let us put it in the following way in terms of China.
Japan sells 10 apples to China.
China buys 10 oranges from USA.
India sells 10 bananas to China.
China buys 10 cabbages from South Korea.
in the Quad, maybe India wants to sell 12 bananas to China, so Korea must sell 9 cabbages to allow China more money for the purchase of bananas. Korea then will benefit by Asking Japan to buy 2 cabbages from Korea.
That is why it won't matter if the EU joins the Quad because China already stated China is not worry about the Quad in a "big" way because China is a very big trading partner of each of the Quad - the Quad is not going todo anything significant. It may give an impression for the sake of the USA that she can create but nothing huge will come out of it - you can't try to damage China and expect China is not going to return fire.
According to the IMF and World Bank, they project China will grow at least 8% a year each year for 10 years straight - what does this mean? Well if we apply the law of 72 in the finance world, divide 8 into 72 and we get 9 - the 9 here means that if China can average 8% growth as projected then in 9 years the Chinese economy will double.
But lets get a better understanding of what GDP mean on a high level using 2019 data.
GDP 2019
USA = 21.7 trillion
China = 14.7 trillion
GDP PPP
USA = 21.7 trillion
China = 27.7 trillion
Therefore, some people say USA is still the biggest economy while others say China is - well it depends how you measure an economy. GDP PPP is not perfect either but it is much more accurate then just plain GDP. GDP PPP takes into account the living costs in a country. Based on a metric developed by IMF/World Bank, 1 is used so USA 21.7 trillion stays the same. But applying the same metric for China, her money can buy more relative to the expenses in her country. By this same metric and the metric may change due to current situation but if all things remain relatively the same, GDP PPP of China could be 60 trillion and USA 30 trillion by 2028-2030 - it means China's purchasing power will be double of the USA even though nominal GDP may be about the same.
Moving further down the line, IMF/World Bank projects that the economy of China is likely to be bigger than the economies of both USA and EU by 2050. I think the EU already considered that before launching or associating with anything that may cause China to react strongly. The EU will support USA in some areas and take a few billion dollars hit but no way the EU is gonna want to lose hundreds of billions. The short-term sightedness of the USA is just pushing for some extra relieve and to create perception that USA and these new organizations is gonna balance the world - and perception is important to some but in reality as China said in her state media, China doesn't worry about the USA, Canada, EU, and the rest of the five eyes if it comes to push and shove.

The ulterior motive of sanctioning Germany over the Russian second gas line to Germany and some other European countries is the demise of European currency so that the rogue nation can have the hegemony over the use of its currency in the world.
